Lasagna – Quick and Easy
Lasagna is a family favorite! Who doesn’t love layers of pasta, meat sauce, and cheese?! My mother taught me to make a traditional style lasagna years ago, which I still firmly believe to be the best lasagna ever! But I don’t often have several hours to give up to cooking, so I adapted this “week night” version of lasagna 🙂

Quick and Easy Lasagna
Fast and easy Lasagna for the hungry family in about 60 minutes. Pasta, meat sauce, and cheese layered and ready to serve.
- 1 package Package of oven-ready lasagna noodles (I use Barilla)
- 1.5 pounds Ground beef (Can use sausage, or combination (I typically use ground beef))
- 24 ounce Jar Pasta Sauce
- 1/4 cup Fresh Basil (chopped or 2 tablespoons dried basil)
- 1 tablespoon Minced Garlic
- 1/2 teaspoon Red Pepper Flakes (optional)
- 1 cup Reduced Fat Cottage Cheese
- 1/2 cup Parmesan Cheese
- 1 Egg
- 2 cups Shredded Mozzarella
- In large skillet, brown ground beef or sausage (drain if necessary and return to skillet).
- Add basil, pasta sauce, garlic, and red pepper flakes (if desired) to skillet.
- Mix well and remove from heat.
- In small bowl, crack egg and scramble.
- Combine cottage cheese, parmesan, and egg.
- Preheat oven to 375
- Spray or oil 9×13 glass baking pan.
- Add thin layer of the sauce mixture evenly to the bottom of the pan.
- Place three lasagna noodles on top of layer of sauce.
- Spread 1/3 of the sauce mixture on top of lasagna noodles.
- Spread 1/3 of the cottage cheese mixture on top of sauce layer.
- Sprinkle 1/3 of the mozzarella on top of cottage cheese layer.
- Place three lasagna noodles on top.
- Add another layer of sauce mixture, cottage cheese mixture, mozzarella, noodles.
- Add remaining layer of sauce mixture, cottage cheese mixture, mozzarella.
- Cover with foil.
- Bake at 375 for 25 minutes.
- Remove foil and bake for additional 5 – 7 minutes.
- Enjoy! I often serve with salad and/or garlic bread!
I prefer the traditional boiled lasagna noodles, but the time savings is worth using the oven-ready noodles!

I gave this one 4 stars. It easy and tastes great but I prefer boiling the noodles but it takes quite a bit longer prep time. Its also very easy to customize the seasonings to get to your ideal taste.
