Do It All Mamma

Hello all! I am a mom to three very active teenagers, two energetic mini-schnauzers, and one grumpy kitty. Some days it feels impossible to work all day, taxi kids around, prepare a meal, squeeze in a workout, walk the dog, AND tackle the additional 327 items on your to-do list! I would love to share my successes and failures in hopes of making your day-to-day life a little easier – from recipes to vacations and everything in between!

Lasagna – Quick and Easy

Lasagna is a family favorite!  Who doesn’t love layers of pasta, meat sauce, and cheese?!  My mother taught me to make a traditional style lasagna years ago, which I still firmly believe to be the best lasagna ever!  But I don’t often have several hours to give up to cooking, so I adapted this “week night” version of lasagna 🙂

Quick and Easy Lasagna

Fast and easy Lasagna for the hungry family in about 60 minutes.  Pasta, meat sauce, and cheese layered and ready to serve. 

  • 1 package Package of oven-ready lasagna noodles (I use Barilla)
  • 1.5 pounds Ground beef (Can use sausage, or combination (I typically use ground beef))
  • 24 ounce Jar Pasta Sauce
  • 1/4 cup Fresh Basil (chopped or 2 tablespoons dried basil)
  • 1 tablespoon Minced Garlic
  • 1/2 teaspoon Red Pepper Flakes (optional)
  • 1 cup Reduced Fat Cottage Cheese
  • 1/2 cup Parmesan Cheese
  • 1 Egg
  • 2 cups Shredded Mozzarella
  1. In large skillet, brown ground beef or sausage (drain if necessary and return to skillet).
  2. Add basil, pasta sauce, garlic, and red pepper flakes (if desired) to skillet.
  3. Mix well and remove from heat.
  4. In small bowl, crack egg and scramble.
  5. Combine cottage cheese, parmesan, and egg.
  6. Preheat oven to 375
  7. Spray or oil 9×13 glass baking pan.
  8. Add thin layer of the sauce mixture evenly to the bottom of the pan.
  9. Place three lasagna noodles on top of layer of sauce.
  10. Spread 1/3 of the sauce mixture on top of lasagna noodles.
  11. Spread 1/3 of the cottage cheese mixture on top of sauce layer.
  12. Sprinkle 1/3 of the mozzarella on top of cottage cheese layer.
  13. Place three lasagna noodles on top.
  14. Add another layer of sauce mixture, cottage cheese mixture, mozzarella, noodles.
  15. Add remaining layer of sauce mixture, cottage cheese mixture, mozzarella.
  16. Cover with foil.
  17. Bake at 375 for 25 minutes.
  18. Remove foil and bake for additional 5 – 7 minutes.
  19. Enjoy!  I often serve with salad and/or garlic bread!

I prefer the traditional boiled lasagna noodles, but the time savings is worth using the oven-ready noodles!

  • I gave this one 4 stars. It easy and tastes great but I prefer boiling the noodles but it takes quite a bit longer prep time. Its also very easy to customize the seasonings to get to your ideal taste.
