Hobo Dinner Recipe
Here is a Hobo dinner recipe that is a quick and easy weeknight meal, with minimal clean up! I’ve used a variety to ingredients to make them a little different every time. We’ve made them in the oven, on the grill, and over the campfire! My boys can eat a lot of food, so this recipe feeds three of us. Of course this recipe is easily customized to taste exactly how you’d like.

Hobo Dinners
Beef, potatoes, carrots, onions, and all the spices you crave. Hobo dinners are the way to go for a quick easy to clean meal for the family.
- 1 pound ground beef or ground turkey
- 2 large white potatoes ((or 1-2 pounds red potatoes))
- 1 package baby carrots ((I use petite for faster cooking))
- .5 small red onion
- salt
- black pepper
- garlic salt
- season salt ((I used Market Pantry "Beef" seasoning this time))

Preheat oven to 400 degrees.

Form ground beef or turkey into 3 – 4 patties – depending on your hunger 🙂

Slice potatoes into thin bite-sized pieces.

Slice onion into small strips.

Lay out 3 – 4 pieces of foil, approx 18 inches long, and coat with cooking spray.

Spread layer of potatoes in center of each piece of foil.

Salt and pepper potatoes to taste.

Spread layer of onions and carrots on top of potatoes.

Sprinkle with garlic salt to taste .

Place meat patty on top of veggies.

Add season salt (or another favorite spice!) to taste.

Layer the remaining onions, carrots, and potatoes, and add salt and pepper to taste.

Fold sides of foil and pinch to seal.

Bake for approx 45 minutes or until meat 160 degrees and veggies are tender.

Easy on the grill or in the oven. Tastes great either way. I give it 5 stars for because of the easily customized flavor, ease of prep and cooking, and most importantly how famous it is with our children 🙂
