Do It All Mamma

Hello all! I am a mom to three very active teenagers, two energetic mini-schnauzers, and one grumpy kitty. Some days it feels impossible to work all day, taxi kids around, prepare a meal, squeeze in a workout, walk the dog, AND tackle the additional 327 items on your to-do list! I would love to share my successes and failures in hopes of making your day-to-day life a little easier – from recipes to vacations and everything in between!

Chicken Fried Rice

This recipe is a family favorite!  It is healthier than most restaurant versions of fried rice.  It has lots of steps, but don’t be intimidated – it really is simple!  It is packed full of protein and will feed a crowd 🙂

Chicken Fried Rice

This recipe has a lot of steps, but don’t be intimidated – its easy!  This recipe serves 5 hungry people!

  • 3 chicken breast ((excess fat removed, if necessary))
  • 4 eggs
  • 2 cups cooked rice ((white or brown))
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1 cup chopped broccoli
  • 1 cup diced onion ((I use yellow))
  • 1/2 cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp diced garlic
  • 1 tsp Onion & Herb seasoning
  • pepper ((to taste))
  1. Cook rice in large sauce pan, according to package instructions.

  2. Cut chicken breast into bite sized pieces.

  3. Dice carrots, broccoli, and onion into small pieces (or use frozen pre-cut veggies).

  4. Crack eggs and scramble in medium bowl.

  5. Spray large skillet or wok thoroughly with pan spray.

  6. Cook eggs over medium heat until thoroughly cooked.

  7. Spoon eggs into bowl and set aside.

  8. Scrape off remaining egg from pan and spray with cooking spray again.

  9. Add chicken to pan and cook over medium-high heat for 2 – 3 minutes.

  10. Add sesame oil, garlic, Onion & Herb seasoning and pepper to chicken.

  11. Cook chicken additional 2 – 3 minutes, stirring often.

  12. Add onions, carrots, peas, broccoli, and soy sauce to skillet and stir thoroughly.

  13. Cover and cook for 3 – 4 minutes.

  14. Add rice and scrambled egg to skillet and mix thoroughly.  

  15. Cook additional 1 – 2 minutes.

  16. Serve immediately and enjoy!
