Do It All Mamma

Hello all! I am a mom to three very active teenagers, two energetic mini-schnauzers, and one grumpy kitty. Some days it feels impossible to work all day, taxi kids around, prepare a meal, squeeze in a workout, walk the dog, AND tackle the additional 327 items on your to-do list! I would love to share my successes and failures in hopes of making your day-to-day life a little easier – from recipes to vacations and everything in between!

Creamy Slow Cooker Chicken, Potatoes, and Carrots

This is a hearty and delicious meal that is so quick and easy!  It is perfect for a busy weeknight.  Its full of protein, veggies, and tons of flavor!  My boys devour it every time 🙂  My older son proclaimed that it was the only way I should ever cook chicken.  It is almost effortless and low cost so it is a fantastic option when you want a flavorful dinner ready to go in the slow cooker after a long day.  I often do the prep in the morning before work – about 20 minutes.   I’d highly recommend as a great comfort food!

Creamy Slow-Cooker Chicken, Potatoes, and Carrots

This recipe feeds 3 – 4 people, depending on appetite!

  • 3 chicken breast ((remove excess fat, if needed))
  • 1 package red potatoes ((washed))
  • 1 package petite baby carrots
  • 1 small onion ((I use red or yellow))
  • 2 packets Onion Soup mix
  • 1 can Cream of Mushroom soup
  • 2 tbsp minced garlic
  • salt ((to taste))
  • black pepper ((to taste))
  • 2-3 cups water
  1. Slice red potatoes  and onion into bite sized pieces. 

  2. Spray slow cooker with cooking spray.

  3. Place chicken breast into slow cooker.

  4. Salt and pepper chicken breast, to taste (I use about 1 tsp each).

  5. Sprinkle one package of Onion Soup Mix over chicken breast.

  6. Spread Cream of Chicken soup over chicken breast.

  7. Add potatoes, onions, and carrots to slow cooker

  8. Sprinkle second package of Onion Soup Mix over veggies.

  9. Add water to slower cooker to cover veggies.

  10. Cook on high temp for four hours – or until chicken reaches 160 degrees and veggies are tender.

  11. Serve immediately and enjoy!
