Easy Chicken Veggie Stir-fry
This is one of my go-to weeknight meals. It is a quick, simple, one pan meal! The combinations of veggies are endless so this meal can be different every time. Today I had mushrooms, peppers, onion, broccoli, and a red curry seasoning pack – a get combo! Just steam some rice, noodles, or even a package of ramen for a delicious and healthy meal.

Easy Chicken Veggie Stir-fry
Quick and simple meal that is both healthy and delicious!
- 3 chicken breast
- 1 red bell pepper
- 1 green bell pepper
- 1 package mushrooms
- 1 – 2 cups broccoli
- 1 small onion ((I use red or yellow))
- 1 package stir-fry seasoning mix ((My favorite is Thai Red Curry))
- 2 tbsp sesame oil
- 2 tbsp minced garlic
- .5 cup water

Remove excess fat from chicken breast (if needed).

Cut chicken breast into bite sized pieces.

Slice peppers, mushrooms, and onion into bite sized pieces.

Thoroughly spray skillet with cooking spray.

Add chicken to pan and cook at medium-high heat for 2- 3 minutes.

Sprinkle half of stir-fry seasoning packet over chicken and stir thoroughly.

Add garlic and sesame oil to chicken and cook for additional 2 – 3 minutes.

Add peppers, mushrooms, onion, and broccoli to pan.

Add remaining stir-fry seasoning and 1/2 cup of water, stir thoroughly.

Cover, reduce heat and simmer for 5 minutes, stirring occasionally.

Serve immediately with rice or noodles (if desired).
This serves 3 – 4 people. I often use whatever veggies happen to be in my fridge – zucchini, peppers, broccoli, pea pods, baby corn, water chestnuts, mushrooms – add whatever suits your fancy 🙂
