Do It All Mamma

Hello all! I am a mom to three very active teenagers, two energetic mini-schnauzers, and one grumpy kitty. Some days it feels impossible to work all day, taxi kids around, prepare a meal, squeeze in a workout, walk the dog, AND tackle the additional 327 items on your to-do list! I would love to share my successes and failures in hopes of making your day-to-day life a little easier – from recipes to vacations and everything in between!

Scrambled Eggs and Veggies

Start the day off right with a nutritious breakfast or change things up with breakfast for dinner!  Either way, this is a great meal that is quick and easy!  Serve with toast, hash browns, bacon, sausage, fruit or on its own for a great meal 🙂

Scrambled eggs and veggies

This is a great meal for a busy day – simple and easy!

  • 6 eggs ((I use free-range omega-3 eggs))
  • 1/2 red pepper
  • 1/2 green pepper
  • 1 cup mushrooms
  • 1/2 small onion ((I use yellow or red))
  • 1 tsp garlic powder
  • salt
  • pepper
  1. Crack eggs in bowl and scramble.

  2. Dice peppers, onions, and mushrooms.

  3. Spray skillet with cooking spray.

  4. Add veggies and cook at medium heat for 5 minutes, stirring often (add 1/4 cup of water if sticking to pan).

  5. Move veggies to side of pan and add eggs to pan.

  6. Add garlic powder to veggies and salt and pepper to taste.

  7. Mix egg into veggies, stirring often.

  8. Serve immediately with toast, bacon, or sausage (if desired)!
