Stuffed Peppers
These Italian flavored stuffed peppers are a healthy and delicious dinner! Many of the ingredients can be prepped ahead of time to make a quick weeknight meal. My son does not care for bell peppers, but he enjoys the meat and rice stuffing mixture on its own. I’ve used all colors of bell peppers and been happy with the results. Red bell peppers are the sweetest, then orange, yellow and green. These are perfect for a cozy night when you are craving a comfort food.

Stuffed Peppers
This recipe serves 4 hungry people.
- 1 pound ground beef
- 4 bell peppers ((any color))
- 2 cups shredded mozzarella
- 2 cups rice ((brown or white))
- 1 small onion ((I used yellow))
- 1 jar pasta sauce
- 1 tbsp Italian seasoning ((I love AllSpice's Gusto Pizza seasoning))
- 1 tbsp minced garlice
- 1 tsp Onion & Herb seasoning

Preheat oven to 400.

Cook rice in sauce pan according to package instructions.

Cut top off bell peppers, remove guts, and wash.

Cook ground beef in skillet over medium-high heat and drain if necessary.

Spray skillet thoroughly with pan spray.

Saute onion in skillet until tender, about 5 minutes (add a little water if it sticks)

Reduce heat to low and add cooked ground beef, cooked rice, pasta sauce, garlic, Onion & Herb seasoning, and Italian seasoning to skillet and mix well.

Steam peppers in steamer pan or microwave safe bowl to tenderize a bit before baking (optional)

Spray 9 x 13 glass baking dish with cooking spray.

Fill each pepper with meat and rice mixture and place in baking dish.

Pour remaining meat and rice mixture into baking dish, surrounding peppers.

Bake for 15 minutes.

Add layer of mozzarella cheese over peppers and meat and rice mixture. Bake additional 5 – 10 minutes, or until cheese is melted.

Serve immediately and enjoy!
