Beef enchiladas
My family loves enchiladas! I swear they would eat them every week, no complaints. They take a bit of time to assemble, but are worth the effort. They are packed full of protein and flavor to satisfy my hungry boys 🙂 Mexican style dishes are a family favorite, which is a nice change (there’s always someone who wanted “something else ” for dinner). You can adjust them to be as mild or as spicy as you like. These enchiladas are a hit every time!

Beef enchiladas
This recipe makes around 6 enchiladas. Can be as mild or spicy as you’d like!
- 1 pound ground beef
- 1-2 cans enchilada sauce
- 1 package tortilla shells ((I use flour))
- 1 package shredded Mexican cheese
- 1 tsp Cilantro Lime seasoning
- 1 tsp Onion & Herb seasoning
- 2 tbsp ground cumin

Cook ground beef in skillet over medium – high heat, drain if necessary.

Combine Cilantro Lime seasoning, Onion & Herb seasoning, and ground cumin in small bowl.

Preheat oven to 400.

Spray 9 x 13 glass baking dish thoroughly with cooking spray.

Spread spoonful of enchilada sauce over center section of tortilla shell.

Add layer of beef over enchilada sauce.

Sprinkle layer of cheese over beef.

Fold in sides of tortilla shell and roll up tightly, place in baking dish.

Repeat steps 5 – 8 for desired number of enchiladas.

Pour remaining enchilada sauce over pan of enchiladas.

Bake at 400 for 15 minutes.

Add layer of shredded to top of enchiladas and bake for additional 5 -10 minutes, or until bubbly and cheese has melted.

Serve immediately and enjoy!
