Do It All Mamma

Hello all! I am a mom to three very active teenagers, two energetic mini-schnauzers, and one grumpy kitty. Some days it feels impossible to work all day, taxi kids around, prepare a meal, squeeze in a workout, walk the dog, AND tackle the additional 327 items on your to-do list! I would love to share my successes and failures in hopes of making your day-to-day life a little easier – from recipes to vacations and everything in between!

Thin crust pizza

Everyone loves pizza!  You can cater this recipe to your own taste with tons of toppings choices and spices.  You can make this a low calorie dinner, if that what you are looking for 🙂 This is one of my favorite week night dinners.  It is simple and satisfying.  I prep a variety of toppings and everyone piles on their favorites – most commonly pepperoni, sausage, mushrooms, peppers, onions, and olives.  I’ve also tried various pre-made crust.  I am happy with pretty much any brand that offers a thin crust.  I’ve made my own from kits before and from scratch.  I’ve had success with all methods, but as a busy mom, I welcome the time savings of the pre-made options.  This really is a delicious, fun, and filling dinner!

Thin Crust pizza

This is a perfect week night dinner – easy to customize to please your whole family!

  • 1 package pre-made thin pizza crust (I've used individual and large sizes)
  • 1 jar pizza sauce (I love Mama Mary's)
  • 1 package shredded mozzarella or Italian cheese blend
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • .5 pound ground pork sausage or Italian sausage (optional)
  • 1 package pepperoni (optional)
  • .5 green bell pepper (optional)
  • .5 small onion (I use yellow or red – optional)
  • 4 oz fresh mushrooms (or canned – optional)
  1. Brown sausage in skillet over medium-high heat until cooked thoroughly (if desired). Drain grease, if necessary.

  2. Saute veggies in skillet over medium heat for approx 5 minutes.

  3. Pre-heat oven according to package instructions (usually 400).

  4. Pour olive oil into bowl, spread over crust using brush or spoon..

  5. Sprinkle garlic powder on top of crust.

  6. Spread thin layer of sauce evenly onto crust.

  7. Sprinkle approx 1/4 cup of cheese on top of sauce.

  8. Top with sausage, pepperoni, peppers, mushrooms, onions, olives – or anything you enjoy!

  9. Bake at 400 for 8 minutes.  Check pizzas and bake for additional 3-4 minutes or until cheese is thoroughly melted.

  10. Serve hot with Parmesan and red pepper flakes!
