Egg Cake Breakfast – Delicious and Healthy
I’m always looking for ways to speed up my mornings. My morning checklist includes a trip to the gym, a puppy play session, dragging a teenage boy out of bed, and putting myself together before heading to my cubicle prison (I mean office job!). I refuse to wake up before 5am so I have to be efficient with my time! I prepare this egg cake breakfast dish almost every week, and have found several ways to change it to keep it interesting and healthy switch up the meat, veggies, and spices to make a unique breakfast each week!

Delicious Egg Cake Breakfast
Tasty and easy to customize Egg Cake recipe that lasts the entire week and provides all the health anyone would need. Full of veggies, meat, and egg.
- 14 eggs
- 1 pound Meat (ground turkey, ground chicken, ground beef, diced ham, bacon crumbles OR exclude meat if desired)
- 8 ounces Mushrooms ((half package pre-sliced mushrooms))
- ½ Green Bell Pepper
- ½ Red Bell Pepper
- ¼ – ½ Onion (depending on your personal taste)
- 1 Any other veggies you enjoy (I’ve added diced tomatoes, fresh cilantro, fresh basil, spinach)
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
- 1 teaspoon Tones Six Pepper spice (I've also used lemon pepper, Cajun spice, cilantro lime, Lawrys, and/or any other spices you love!)
- Pre-heat oven to 400
- Chop veggies into small pieces.
- Brown meat and drain grease (if needed).
- Spray 13×9 glass pan with pan spray or thoroughly grease with olive oil.
- Spread cooked meat evenly to the pan.
- Add veggies to pan to sauté.
- Season veggies and cook until tender.
- Layer veggies over meat.
- Scramble eggs in bowl.
- Pour eggs over meat and veggies.
- Bake for 25 minutes or until set
- I usually cut into 10 – 12 pieces, depending on the thickness. Cut each serving into bite sized pieces and microwave for 60 – 90 sections to reheat. Refrigerate and they are good for the entire week.

This healthy breakfast meal keeps my husband and I fed for a week. It refrigerates and reheats well and I can change up some of the recipe details to keep the dish interesting.
