Chicken Fajitas – Healthy and Easy
Chicken fajitas is a simple dish that is a family favorite of ours. It is packed full of protein and veggies, and tons of flavor! It is quick, easy, and always a crowd pleaser 🙂 This recipe is designed for five hungry people (I have three teenagers and a hungry husband!)

Healthy and Easy Chicken Fajitas
Fast, healthy and easy Chicken fajitas recipe. It is packed full of protein and veggies, and tons of flavor! Always a crowd pleaser.
- 1.5-2 pounds chicken breast
- half red bell pepper
- half green bell pepper
- half onion
- 1 tbsp cilantro lime spice ((I use Tone's))
- 2 tsp ground cumin
- 1 tsp cayenne pepper
- 1 tsp chili pepper ((I use hot chili pepper))
- 1 tsp garlic salt
- shredded lettuce (optional)
- fresh cilantro (optional)
- fresh tomatoes (optional)
- salsa (optional)
- hot sauce (optional)

Slice peppers and onion into small pieces or strips

Remove excess fat from chicken (if needed) and cut into bite sized pieces

Combine cilantro lime spice, cumin, chili pepper, cayenne pepper, and garlic salt into small bowl

Chop cilantro, tomatoes, and any other toppings you like (optional)

Heat skillet to medium and spray with pan spray or coat with oil

Add chicken to skillet and stir frequently (add 1/4 water if meat sticks to pan)

Top chicken evenly with 3/4 of seasoning mix

Cook chicken for 4 minutes stirring often

Add peppers and onions to skillet

Add remaining seasoning

Cook additional 4 – 5 minutes, string frequently (dd 1/4 water if needed)

Remove from heat and serve with your favorite flour tortillas, corn shells, chops, or with salad – garnish with cilantro, lettuce, tomatoes, salsa, hot sauces as desired.
You can replace the spices with a packet of your favorite taco or fajita seasoning!
